Fall is in the air, so try this cozy recipe found in our cookbook, One-Hundred Eats by Wren & Willow
Ingredients:
4 or 5 Russet Potatoes
4 Tbsp. Unsalted Butter
1/2 C. All-Purpose Flour
6 C. 2% Milk2 tsp. SaltGround Black Pepper
3/4 C. Shredded Sharp Cheddar Cheese
1/2 C. Chopped Green Onions
1/2 C. Light Sour Cream
Directions:
Preheat the oven to 400º. Prick the potatoes with a fork. Place the potatoes on the baking sheet and bake for 1 hour. Remove from the oven and let sit until cool enough to handle. Scoop the insides of the potatoes into a food processor, discarding the peels. Pulse until the pieces are broken into small chunks. In a large stockpot or Dutch oven, melt the butter. Add 1/4 C. of flour to the pot and whisk into the butter. Cook, whisking constantly, until golden brown, about 2 minutes. Cook until thick and bubbling, about 6 to 8 minutes. Mix in the potato chunks. Whisk in the salt, pepper, and cheddar and stir until the cheese is melted. Removed from heat, stir in the green onions and sour cream. Serve immediately. Garnish with sour cream, cheddar cheese, green onions, and bacon as desired.
If you have visited Wren & Willow's office building, odds are you have seen Cliff Kendall working at his desk, coffee in hand, surrounded by vintage angling gear. The theme of his office perfectly reflects his love of fishing. Cliff's appreciation for all things outdoors was instilled in him at a young age by his father who would take him on adventures to rivers and lakes in Eastern Washington. Cliff recently returned from a fishing trip in Alaska he went on with friends and his son. Wren & Willow would not be where it is today if it was not for Cliff's expertise and hard work. Every company needs a "Cliff"! But you can't have this one, this one is ours.
